It would really just require that you have cracked black pepper, someolks, blend the egg yolks, whatever you're doing until they get a little pale. As air gets incorporated, they will get pale. What you're looking to do is take little bits of vinegar and trap those little bits of vinegar within the fat of the egg yolk whip mixture that you're making. You could add a little Dijon mustard to this too, it was really good. But instead of pouring the oil directly in which can sometimes separate it, a great way to do it is to pour the oil onto the side of the bowl. And by pouring it onto the side of the bowl,

[00:17:45] And if you whip quickly then start streaming in the oil. And as the oil incorporates, incorporates, incorporates, because you're adding it slowly and whipping vigorously, you're going to get an emulsified dressing. And that darker balsamic vinegar color is going to start to lighten up and become sort
[00:19:00] of that purplish, you know, dark sort of dirty, purplish color that a balsamic vinaigrette amazing. It's pretty amazing. Probably you may fail. All right, but that's okay.
