[00:09:58] This from the gray man brief farmers in the UK warn of pending food shortages

[00:10:16] and food price increases following it.

[00:10:18] Quote, extreme rainfalls reports say rainfall during the past 18 months.

[00:10:24] Uh, then it has over 18 month period since record keeping began in 1836.

[00:10:30] And because the rain harvest, the rain hasn't stopped.

[00:10:33] Many farmers have been unable to get crops such as potatoes,

[00:10:36] carrots, and wheat into the ground.

[00:10:39] Um, one threat, one solution, you know, potatoes thing, the planting season is

[00:10:46] essential.

[00:10:46] We were worried about the wheat crop in Ukraine.

[00:10:49] We were worried about the price of wheat and that kind of thing because

[00:10:51] of being a struggle to get in into the ground there.

[00:10:54] Now we're seeing similar concerns in the UK.

[00:10:58] Uh, this is all about adaptability folks.

[00:11:02] You know, this is about how you look at, at your food.

[00:11:06] Like, how do you look at food?

[00:11:09] Is food a thing that comes exclusively from the supermarket?

[00:11:13] It's a question.

[00:11:15] Is food a thing that comes exclusively from your backyard?

[00:11:18] Now, a couple of months ago we did a master class called build your

[00:11:21] food security network and I've got to get that up so you guys who aren't

[00:11:27] members can, uh, can take that course.

[00:11:30] If you are a member, you'll be able to just watch the whole master class

[00:11:39] Is I think it was something like 18 different ways to bring food into your

[00:11:44] home.

[00:11:46] That's, that's what you want.

[00:11:49] That's exactly what you want.

[00:11:50] You want to have as many means of food as possible.

[00:11:53] It's not just about a garden, a pantry and long-term food storage.

[00:11:59] You know, you can focus, you don't even have to focus much of your time

[00:12:06] energy.

[00:12:06] You can focus your time and energy and, and at least take food off the

[00:12:11] concern, at least be able to say, you know, in most cases, particularly

[00:12:14] like uncharacteristic rainfall we're going to eat.

[00:12:20] I feel like as a prep or one of your goals should be when, when the

[00:12:25] emergency or the crisis is something you can adapt your way out of you

[00:12:29] do that right?

[00:12:31] Like, as opposed to one thing has gone wrong.

[00:12:34] One hiccup in the supply chain has happened and now we're starving.

[00:12:38] Right?

[00:12:39] I feel like we should all be able to weather pending food shortages.

[00:12:45] Right?

[00:12:46] So that's my take on that.

[00:12:50] That's HTF chef for the day.

[00:12:52] I want to talk to you guys about, I guess we'll do another soundbite.

[00:12:57] I want to talk to you guys about knife skills.

[00:13:01] Now that is a delicious cut of long pork.

[00:13:14] It is good to be back behind the microphone folks.

[00:13:17] It feels good.

[00:13:18] I don't know if it's the rainy day or whatever, but, um, feels good.

[00:13:23] So something that we rigorously practice in the early days of culinary

[00:13:28] school are nice skills and nice skills are essential, you know, they're

[00:13:34] not really something you can get around.

[00:13:36] Most people don't take full advantage of them, but there are

[00:13:39] things that are vital, you know?

[00:13:43] I think being able to, uh, being able to understand the difference

[00:13:48] between things like dicing and mincing.

[00:13:52] You know, in the French word for a very, very small dice, which is

[00:13:55] really kind of a cool thing to be able to do is called brunoise.

[00:14:00] The way we started is we would use potatoes and you can practice

[00:14:04] this way at home too.

[00:14:07] And we would cut the potato, peel the potatoes, then cut the

[00:14:10] potatoes into rectangles, you know, shave off each side, boom, boom,

[00:14:15] boom, flat in the ends.

[00:14:17] And from that rectangle, we'd be able to cut batons and batons were just

[00:14:22] about, you know, a half inch, um, wide rectangle baton, you know,

[00:14:30] basically like a big fat French fry.

[00:14:33] And then we would cut French fries.

[00:14:34] We would, we would also cut potatoes up in a quarter inch and that would,

[00:14:39] that's what we're called French fries.

[00:14:40] And then we would also cut potatoes up into an eighth inch, which

[00:14:44] we refer to as the, uh, Julienne.

[00:14:49] And Julienne is essential.

[00:14:50] I mean, you have to be able to Julienne things like peppers and

[00:14:53] onions, you know, you, you think you hear the word Julienne and you

[00:14:57] think, uh, what kind of fancy dish do you make with the Julienne?

[00:14:59] No, like I need to be able to Julienne peppers and onions so that I can make

[00:15:04] a good chicken cheesesteak for my, my wife, you know what I mean?

[00:15:07] That's serious.

[00:15:11] They're good.

[00:15:11] And, oh, and, and you want to do like a, such an overlooked meal,

[00:15:17] particularly in rainy weather and in the cold, if you have a broiler

[00:15:22] is the French onion soup, you know, French onion soup is such a

[00:15:28] powerhouse meal, right?

[00:15:30] You're taking onions, which are so full of all kinds of nutrition and

[00:15:36] Julienne of onion.

[00:15:38] You know, we, we would do like a 50 pound bag of Julienne onion.

[00:15:42] You had no eyes left.

[00:15:44] Eyes looked like my right eye does right now.

[00:15:48] You cook those onions down until they're soft and starting to

[00:15:51] caramelize and, uh, then beef broth, beef broth.

[00:15:57] You can add some rosemary.

[00:15:58] You can add some time, whatever kind of seasonings, cracked pepper,

[00:16:01] bay leaf, that kind of stuff.

[00:16:04] And then the beauty of a French onion soup is, is how the French decided like

[00:16:08] let's take a crouton and then some Gruyere cheese, shred the Gruyere on

[00:16:13] top of the crouton and broil the whole thing.

[00:16:17] I mean, it's so, it's such a nice little treat.

[00:16:20] I'd love a good French onion soup, man.

[00:16:23] But anyway, that's the Julienne.

[00:16:25] The mints can often be like confused with the small dice, like a brunoise, right?

[00:16:31] Small, small dice, but still a square.

[00:16:33] You're still going for that sort of cube.

[00:16:35] When you mince, you want a coarse sand texture, you know, and things

[00:16:40] like that are important, you know, like a minced garlic, a minced ginger.

[00:16:44] You don't want to chew on it in a dish.

[00:16:46] You want it to just basically disappear into the sauce, that kind of thing.

[00:16:51] Um, a minced parsley can be really good also.

[00:16:56] Minced herb mixes, fresh herbs, that kind of stuff.

[00:17:00] Um, the mincing is an important thing.

[00:17:03] It's important to be able to, to mince, you know, and know the difference.

[00:17:07] They what else?

[00:17:11] Pairing and peeling with a pairing knife.

[00:17:14] Those are important skills too.

[00:17:16] Nothing can really cook properly if it's not all cut to around the same size.

[00:17:22] You know what I mean?

[00:17:22] We're talking about similar ingredients, like if you take a half of potato and cook

[00:17:28] it in boiling water with a quarter inch cube of potato, what do you think's going

[00:17:32] to be done first, right?

[00:17:34] So you got to get it in the ballpark and it affects things.

[00:17:38] Um, what else?

[00:17:41] The chiffonade.

[00:17:43] The chiffonade, the chiffonade is a really cool knife skill for this time of year.

[00:17:50] If you are a member, you'll see the chiffonade in the, in the plantain

[00:17:54] video I talked about at the beginning.

[00:17:56] But it's essentially when you take large flat leaves, mint, basil, those

[00:18:01] kinds of things and pile them on top of each other, herbs, and then

[00:18:05] you roll them into like a cigar.

[00:18:07] And then once they're tightly rolled, you come in and slice them very

[00:18:14] finely and you get like a filament thin sort of slice of herb.

[00:18:20] And it's a beautiful thing.

[00:18:21] It's, it's the way you dress a caprese salad.

[00:18:26] It's, it's all good.

[00:18:27] It's a great thing, but, um, nice skills, PBN family.

[00:18:31] They're important.

[00:18:33] They're important.

[00:18:34] They're as important as knowing how to control the heat.

[00:18:36] You know what I mean?

[00:18:38] Uh, to no collapse.

[00:18:43] So for words, I want to bring you something really weird.

[00:18:49] We've got a new book to read out of.

[00:18:52] This is from the book of five rings, Miyamoto Musashi.

[00:18:57] When he got old, he handed off Miyamoto Musashi, 60 men plus.

[00:19:04] He killed 60 plus men in, um, sword duals, beast, monster, Japanese,

[00:19:12] devastating two, two sword swordsmen.

[00:19:16] And he handed off these five scrolls when he got old and was started to die.

[00:19:20] He retired, you know, the ground book, the water book, the fire book,

[00:19:24] the wind book, and the book of the void.

[00:19:26] He handed those scrolls off to, uh, one of the younger folks that he was

[00:19:31] living with in this mountain retreat.

[00:19:34] Well, he was dying with, and in one section he writes about

[00:19:39] rat's head and ox's neck.

[00:19:42] Rats had ox's neck means that when we are fighting with the enemy

[00:19:46] and both he and we have become occupied with small points in an

[00:19:50] entangled spirit, we must always think of the way of strategy as

[00:19:56] being both a rat's head and an ox's neck whenever we have become

[00:20:00] preoccupied with the small details, we must suddenly change into a large

[00:20:04] spirit, interchanging large with small.

[00:20:08] This is one of the essences of strategy.

[00:20:10] It's necessary that the warrior thinks in his, in this

[00:20:12] spirit in everyday life.

[00:20:14] You must not depart from the spirit in large scale

[00:20:16] strategy, nor in single combat.

[00:20:19] I think it's solid advice.
